The Flavor of Trees Workshop

Join me for a one-of-a-kind afternoon workshop exploring the wonderful taste variety offered by the trees of the University’s of Vienna botanical garden.

First, we’ll explore the Garden together while tasting on site smoked cheese, white and oak barrel aged whiskey, different types of maple syrup, birch water and syrup, pine sap chewing gum, larch tree sweets and much more.

Afterwards, we will have the truly unique opportunity to gather fresh tree ingredients directly from the garden’s trees before processing them together in the new Botanicum building. Dishes include fresh birch leaf tonic, pine needle pesto, hazelnut bark pancakes, linden leaf dolmades, and on and on. Also learn more about the history of “tree eating” and how it could become an important part of our future food system.

The recipes for all dishes will be given to participants, as well as the tree dishes made during the course and also several edible surprises.
